Easy Gluten-Free Dinner Rolls with Simple Mills Bread Mix

I know there are many wonderful recipes out there for homeade gluten-free dinner rolls, but sometimes we just want the ease of a mix, right? Plus, I say anything that is baked in your own oven — even if it starts with a mix  — qualifies as homeade. I have been very impressed with all of the Simple Mills gluten-free products I’ve sampled, so I decided to give their Artisan Bread Mix a try.

On the box there are directions for rolls, flat bread and a loaf of bread. For the rolls, I added two eggs, 1/2 cup of water, two tablespoons of olive oil and three tablespoons of apple cider vinegar.

I poured the batter into muffin tins (the mix makes 12 rolls). I like my Wilton Perfect Results non-stick bakeware.

After baking the rolls for 25 minutes at 350 degrees, I pulled them out froom the oven and let them cool on the cooling rack.

These were very good! The flavor and aroma were both quite nice. The texture was not too heavy or grainy, which is a real problem with a lot of gluten-free baked goods. My gluten-eating family members really enjoyed them, too. These would be right at home served at a holiday meal but are easy enough for a weeknight. I will definitely make them again. I am also eager to try the flat bread and loaf of bread options using the same mix. These are a winner!
