Confession: I sometimes eat these cookies for breakfast. This recipe from Happy Healthy Mama takes about three minutes to whip up, and I have been known to add a tablespoon of unsweetened cocoa, a bit of peanut butter and a splash of vanilla for a total of six ingredients! Look for certified gluten-free oats if you have celiac disease.
