Crispy Air-Fried Chicken Breasts

Adventures in Air Frying, Part 1

I recently purchased an air fryer. I know many people who rave about their air fryer and I wanted to see what all the hype was about. I have to say I think I’m going to really enjoy cooking with this appliance. Here is the story of my first attempt making crispy air-fried chicken. Spoiler alert: the chicken turned out great!

I marinated 1 1/2 lbs. of chicken breasts in one cup of buttermilk for four hours in the refrigerator. Buttermilk is a tried-and-true marinade for “regular” fried chicken, and I think it helps make the chicken moist and juicy when cooked.

In three separate bowls, I prepared:

  1. One cup of gluten-free flour with one tablespoon of Old Bay Seasoning. Cup4Cup Gluten-Free Multipurpose Flour is my go-to gluten-free flour.
  2. Two eggs, beaten.
  3. One cup of gluten-free Panko bread crumbs.

I coated the chicken in the gluten-free flour mixture, then dipped it in the eggs and finally rolled it in the gluten-free Panko bread crumbs.

After spraying both sides of the chicken with cooking spray, I baked the chicken at 400 degrees for 10 minutes. I baked the chicken in batches so there was plenty of room in the air fryer basket for air to circulate.

The chicken was very crispy on the outside and tender and juicy on the inside. Everyone in my family really enjoyed the meal! I think the chicken could use a little more zip of flavor, so the next time I make this I am going to add some spices to the marinade. Stay tuned for my next adventure in air frying!

Crispy Air-Fried Chicken Breasts

1 1/2 lb boneless, skinless chicken breasts
1 cup buttermilk
1 cup gluten-free flour (I use Cup4Cup Gluten-Free Multipurpose Flour)
1 tablespoon Old Bay Seasoning
2 eggs
1 cup gluten-free Panko bread crumbs
Cooking spray

Marinate the chicken breasts in buttermilk for four hours or more in the refrigerator.

Preheat air fryer to 400 degrees.

In three separate bowls, prepare the following:

  • gluten-free flour combined with the Old Bay Seasoning
  • 2 eggs, beaten
  • gluten-free Panko bread crumbs

Dredge the chicken in the flour/Old Bay mixture. Next, dip it in the eggs. Finally, coat it with the Panko bread crumbs. Spray both sides of the chicken with cooking spray before placing in the air fryer.

Bake at 400 degrees for 10 minutes, until chicken reaches internal temperature of 165 degrees and is brown and crispy.
